Jon's Kettle Corn



This winter, Jonathan created this kettle corn recipe as a winter sweet treat. He has been our ice cream and smoothie maker for years, but these are best eaten when the weather is warm in the summer.  This kettle corn is a great cold weather dessert. 

Ingredients:

1/2 cup organic popcorn kernels (be sure to buy organic!)
1/2 stick sweet cream butter
1/2 cups pure honey
1/4 tsp sea salt
1 tsp vanilla extract (don't use imitation)

Preheat oven to 375 °F.  Air-pop the popcorn kernels and place in a large oven-proof pan.  In a medium saucepan over medium heat, stir together the butter, honey and salt until butter is melted.  Increase heat and boil mixture for 1 minute, stirring constantly.  Remove from heat and stir in vanilla.

Immediately pour the warm butter mixture over the popcorn and stir to coat.  Bake until golden all over, stirring every 5 minutes (it takes about 25 minutes).

Remove from oven and stir occasionally to break up chunks.  Enjoy while still slightly warm, but it is excellent once cooled too.
