Oven Roasted Potatoes

 


This is our version of French fries which we have with hotdogs or hamburgers about once a week.  These are easy to make and loved by kids (and adults!).  Our current hotdog preference is Whole Foods buffalo or beef hotdogs or Applegate Organic beef hotdogs.  Shelton Uncured Turkey Franks are also a good choice for children, but I only use them now to make pigs-in-a-blanket.  They are not big enough for teenage boys.  Be sure to buy a good quality hotdog that is made from better quality meat and sea salt, and which does not have added perservatives such as nitrites.



Ingredients:

5 pound bag of potatoes (any kind)

2 - 3 Tbl. Extra Virgin organic olive oil
2 - 3 cloves minced garlic
1 tsp. Italian seasoning (I use Frontier organic or Simply Organic brand)
½ - 1 tsp. sea salt
¼ tsp. black pepper, freshly ground

In a large bowl, mix together olive oil, garlic and spices.  Wash potatoes; remove defects (don't peel).  If your potatoes have started to sprout - that is a good sign, they have not been irradiated.  Just pull off the sprouts; they are still good.  Cut the potatoes into chunks, about ¾" size.  Toss in bowl with oil and spice mixture, mixing thoroughly so all pieces are coated.  Oil glass baking dishes with olive oil (I use 3 large rectangular ones).  Place in single layer in baking dishes and roast at 425°F for 50 minutes, loosen and flip with spatula after 30 minutes. (If you try to flip too soon, they break apart.) Recipe can easily be cut in half.
 
Save extras for a quick meal of ‘Roasted Potatoes and Sausage’.
