Quinoa with Celery and Almonds




This quinoa dish is a quick, simple, yet delicious side-dish.  Quinoa (pronounce KEEN-wah) is a great addition to your diet. 

Ingredients:

2 cups filtered water
1 tsp organic turmeric
1 tsp sea salt
1 cup quinoa
1/4 to 1/2 cup raw almonds, chopped coarsely
3 - 5 stalks of organic celery, diced
2 Tbl fresh parsley (optional), chopped finely

In your rice pot (a heavy pot with a tight fitting lid), place the water, turmeric and sea salt.  Bring to a boil.  Add the quinoa and bring to a second boil (keeping lid on tightly).  Let boil a minute or two longer, and then turn off the heat and move the pot off the hot burner (keep lid on tightly).  Let sit for 15 to 20 minutes.

In the meantime, chop up almonds, celery and parsley. 

When ready to serve, remove lid from pot and fluff the quinoa with a fork.  Stir in the almonds, celery and parsley and serve.

  1. This looks so good and easy! Where do you find your little smokies and is that barbecue sauce on them? That looks like a great meal for my family!

  2. It is a great meal for our family too. It is incredibly easy. The little smokies in the photo are Beeler brand from Natural Grocer, but I have also bought a similar Applegate brand at Whole Foods. My new favorite BBQ sauce is Organville Original, sweetened with agave nectar, but Annie's BBQ sauces are good too (but have cane sugar in them).

    1. Yes, and no. I am only okay with using pure honey and pure maple syrup, and dried fruits and dates, as sweeteneres in foods that I make. Agave nectar is only a little bit better than cane sugar, so don't use it in your baking at home. But for some items, like ketchup and barbeque sauce, unless you make your own, there is not much choice. What I also don't like that is in both BBQ sauces is Xanthan gum. I now make my own BBQ sauce for my meatloaf recipe, which I will be posting soon, but it is not good enough to stand alone as a sauce. Something I will work on this summer perhaps. We should have a BBQ sauce contest!
